After a month of not going out much, I needed a curry to lift my spirits. So I defrosted some chicken thighs and raided the spices. I used some cream in a carton that I had in the cupboard as I didn't have natural yoghurt and I must say it is one of the best. Lots of the ingredients can be substituted too, which makes it a great recipe to make at the moment while the supermarket stock.

Steps to make Store cupboard curry:

  1. Sweat onions down in some oil. Add garam masala and then the other spices. Mix well and cook for about 3-4 mins. Then add the chicken.
  2. When chicken turns white, add chopped tomatoes. Stir and simmer on low for about 45 mins. Meanwhile cook the rice in salted water, drain well and keep warm while curry finishes.
  3. After about 45 mins, add cream. Stir and cook for another 2-3 mins. Serve 😀.

STORE CUPBOARD CURRY Ingredients you've probably got in your cupboards anyway. You can substitute the chickpeas for chicken or beef if you prefer. If you are vegan - you can substitute the honey for sugar or sweetner (this is just to take the bitterness out the tomatoes) Here's an easy, healthy and delicious chickpea curry made with store cupboard ingredients.
